I am strangely passionate about muffins. I think they are the best snack / treat / addition to breakfast / comfort food, and honestly I will not be taking questions. They’re a soft little miniature cake you can carry around with you?? And they can even be healthy?? Maybe I’m not strange and it’s actually strange if you’re NOT obsessed with muffins.

Creating muffin recipes that are made with whole ingredients AND insanely delicious is something of a passion of mine, and these chocolate greek yogurt brownie muffins are TOP TIER my friends!!

Here’s the practical part, because that’s what actually decides whether you make something on a Tuesday. One bowl. One spatula. Thirty minutes start to finish, nineteen of which the oven does for you. No mixer, no stand mixer bowl to wash, no creaming butter and sugar. The greek yogurt is the little 5.3 oz individual cup you already grab at the store โ€” you dump the whole thing in, so there’s no half-used tub going sad in the back of your fridge.

They’re fudgy like a brownie and soft like a muffin, which is exactly the point. If you’re on a muffin kick like I permanently am, my [Wild Blueberry Muffins] are the same one-bowl situation in a completely different flavor lane.

  • One bowl, one spatula. The dish count is LOW and that is a real factor in whether a recipe survives in my kitchen.
  • Thirty minutes, start to cooling rack. About eleven minutes of actual work, nineteen in the oven.
  • No mixer. Bananas get mashed with a fork, everything else gets stirred. That’s it.
  • A third of a cup of sugar for twelve muffins. Ripe banana and cacao are carrying most of the flavor load.
  • Genuinely fudgy. Cacao powder plus the yogurt gives you brownie texture in muffin form, not dry chocolate cake.

Everything you’ll need to make greek yogurt brownie muffins

  • Ripe bananas (2, mashed). The brown-spotted ones you were about to feel guilty about. They’re the sweetener and the moisture, so genuinely ripe matters more here than it does in banana bread.
  • 2% Greek yogurt (5.3 oz). I use Fage, and I use the single-serve cup on purpose โ€” it’s exactly the amount, so there’s no measuring and no leftovers. 2% is the sweet spot: enough fat for a tender crumb without making the batter greasy alongside the coconut oil.
  • Coconut oil (ยผ c, melted). Melted, not softened. It keeps these dairy-light and gives a cleaner chocolate flavor than butter does.
  • 2% milk (โ…“ c). Just enough to loosen a batter that’s otherwise thick with banana and yogurt.
  • Coconut sugar (โ…“ c). Less refined than white sugar with a faint caramel note that works beautifully with cacao. Cane sugar works too โ€” it’ll read slightly sweeter and lighter.
  • Cacao powder (ยผ c). Not the same as cocoa powder โ€” see below. This is where the brownie flavor comes from.
  • Egg (1). Structure and lift.
  • Vanilla (2 tsp). Two teaspoons is more than most muffin recipes call for and it’s deliberate; it rounds out the cacao.
  • Flour (1โ…” c). [SAVANNAH: is this all-purpose, white whole wheat, or a blend? I’ve left it as “flour” in the card, but the site version should specify โ€” it’s the single most-asked question on a muffin post.]
  • Baking soda (1ยผ tsp) + salt (1 tsp). The salt is not a typo and it’s not optional โ€” chocolate falls flat without it.
  • Mini semisweet chocolate chips (โ…“ c). Mini, so every bite gets some instead of three lucky bites getting all of them.

Cacao powder vs cocoa powder โ€” does it actually matter?

They come from the same bean and they are not the same ingredient. Cacao powder is cold-pressed from fermented, unroasted cacao beans. Cocoa powder is roasted at high heat, and Dutch-process cocoa is additionally treated with an alkalizing agent that neutralizes its acidity.

Two things follow. First, flavor: cacao is more bitter, fruitier, and more intense, which is exactly what you want when you’re only using a third of a cup of sugar for twelve muffins. Roasting mellows cocoa and makes it taste rounder and sweeter, so a swap will make these read a little flatter.

Second, and more practically: this recipe leavens with baking soda, and baking soda needs acid to react. Cacao and natural cocoa are both acidic. Dutch-process cocoa is not, which is why it’s the one substitution here that can actually change how the muffins rise.

How to make greek yogurt brownie muffins

  1. Get the oven and tin ready. 375ยฐF, paper liners in the tin, and grease the liners. Greasing lined tins feels redundant and it isn’t โ€” a low-fat, high-moisture chocolate batter sticks to paper.
  2. Stir the wet. Mashed bananas, greek yogurt, vanilla, egg, melted coconut oil, milk, and coconut sugar in one large bowl until it’s smooth and uniform. No mixer, just a whisk or a sturdy spoon.
  3. Add the dry right on top. Cacao powder, salt, baking soda, and flour go straight into the same bowl. Mix until just combined โ€” a few flour streaks still visible is the right stopping point.
  4. Fold in the chips. Spatula or wooden spoon, a few turns.
  5. Scoop and bake. Divide evenly between the 12 liners and bake 18โ€“19 minutes. Cool completely on a rack, pulling them out of the tin as soon as you can handle them.

Notes

  • Let the Greek yogurt and milk come to room temperature so the melted coconut oil does not re-solidify into specks.
  • Grease the paper liners even though they are liners. This batter sticks.
  • Cane sugar can replace the coconut sugar 1:1.

Tips for the best greek yogurt brownie muffins

  • Let the yogurt and milk sit out for a few minutes first. Melted coconut oil hitting cold dairy re-solidifies into little white specks that never fully disappear. Room temperature-ish dairy prevents it entirely.
  • Grease the liners even though they’re liners. Step one for a reason. This batter is low in fat relative to its moisture and it will grab onto paper.
  • Stop mixing early. Once the flour goes in, every extra stir builds gluten, and in a chocolate batter that shows up as a rubbery, tunneled crumb instead of a fudgy one. Streaks are fine.
  • A toothpick is a bad judge here. Melted chocolate chips read as wet batter no matter how done the muffin is. Look at the edges instead โ€” they should be set and just pulling from the liner โ€” and start checking at 18 minutes.
  • Get them out of the tin fast. Muffins left in a hot tin keep steaming from underneath, and steam is what turns a paper liner gummy and makes it peel half the muffin off with it.

Ingredient Swaps & Substitutions

  • Cane sugar for coconut sugar. Tested and fine โ€” it’s the swap written into the original recipe. Slightly sweeter, slightly less caramel depth.
  • Whole milk greek yogurt for 2%. I haven’t tested it, but I’d expect a richer, denser muffin. Nonfat is the one I’d avoid โ€” with only ยผ cup of oil in the whole batch, that’s where dryness would come from.
  • Any milk for the 2% milk. Almond, oat, or whole should all behave here; it’s only โ…“ cup and it’s there for consistency, not structure.
  • Gluten free. I haven’t tested these with a 1:1 gluten free blend. If you try it, use one that already contains xanthan gum and expect a more tender, more fragile muffin.
  • Dutch-process cocoa for cacao. Possible, but read the spotlight above first โ€” you’d want to swap in baking powder, and I haven’t tested those proportions.
  • Egg free. I wouldn’t, at least not without testing. The egg is the only real structure in a batter this wet.

Meal Prep Tips

  • Room temperature: 2 days in an airtight container with a paper towel underneath
  • Fridge: 5 days
  • Freezer: 3 months, wrapped individually. These are ideal freezer muffins because the banana and yogurt keep them from drying out on the reheat.
  • To reheat from frozen: 30-45 seconds in the microwave from frozen. The chocolate chips go melty again, which is arguably better than day one.
